Your Genie in a Bottle: What is Anejo Tequila?

To understand why this spirit commands such respect, start with its name. Añejo means “vintage” or “aged” in Spanish. After distillation from 100% blue agave, this liquid rests in oak casks for a minimum of twelve months and up to three years. During that time, the wood imparts layers of vanilla, caramel and spice while smoothing out harsh edges. The result is a spirit that reads more like a fine bourbon or cognac than the raw-agave zing of its younger siblings.

The classic shot ritual of salt, lime, and swallow still has a place here. But if you’ve got a good bottle of tequila, everything needs to slow down. That’s the point. You don’t just go for quantity. Quality is where it’s at. 

Swirl the spirit, inhale its aroma, then let it coat your tongue. It is this act of mindful sipping tequila that transforms a drink into a social ritual. You end up comparing tasting notes, tracking subtleties in flavor and forging memories over shared bottles.

  2. Use a tulip-shaped glass or cognac snifter. A wide bowl and narrow rim allow for aroma concentration.
  3. Pour a small amount for tasting. Remember, we’re sipping. 30 to 45 mL is enough.
  4. Swirl gently, inhale above the glass and again at rim level. Be mindful of the inhalation. Don’t just sniff for the sake of sniffing. Breathe in the aroma.
  5. Sip slowly, allowing the spirit to coat all areas of your tongue.

What if you’re sipping with friends? That’s the point in all this, right? Chances are that tequila isn’t the only thing on the menu. What can you pair with the tasting? How about some dark chocolate squares or cocoa-dusted truffles… Or a charcuterie plate loaded with aged cheeses and cured meats! Even spiced or candied nuts go well with tequila. If you want something more substantial, yes, cuts of grilled steak with a garlic butter and squeeze of lime will do.

Play around with pairings depending on your budget. A steep price tag shouldn’t be a requirement if you’re enjoying a night with friends.

Mixing Things Up: Yay or Nay?

While añejo is primarily a sipping spirit, its complexity can also transform cocktails. We know, we know. This might be a controversial take. But to each their own. There is nothing wrong with that, especially if that’s your preference. 

When your drink calls for whiskey, grab añejo tequila instead. We’re talking of classics like an Old Fashioned or Manhattan. Añejo tequila’s sweet and woody notes add such a twist to stirred drinks. No, it’s not a waste if you enjoyed drinking it.
